Emily Rubin, RD, LDN is a dietitian who has been working with the Division of Gastroenterology and Hepatology at Thomas Jefferson University since 2001.  She will present a webinar titled “The RISE of the gluten free diet – Who? What? Where? When? Why?”. Emily is the main dietitian at Jefferson’s Celiac Center, Fatty Liver Center, and Weight Management Center, counseling both pediatric and adult patients on a wide range of medical conditions including Celiac Disease, Non-Celiac Gluten Sensitivity, Food Intolerances/Allergies, Irritable Bowel Syndrome, Gastroparesis, Inflammatory Bowel Disease, GERD/Heartburn, and Liver Disease -fatty liver (Nafld/Nash) as well as Diabetes, Kidney and Heart Disease. 

The webinar will help viewers identify symptoms, diagnosis, and treatment of Celiac disease vs. Non-celiac gluten sensitivity (NCGS). The objects for the webinar are:

A.    Describe risk factors for and clinical presentation of celiac disease.

B.    Describe methods of screening and diagnosing celiac disease

C.   What are some of the vitamin Deficiencies associated with Celiac disease?

D.   What is the difference between NCGS and celiac disease?

E.    Discuss in-depth the GLUTEN free diet

F.    Discuss treatment modalities and resources for patients with celiac disease and NCGS.
